Cold brew

Time does the work. A coarse grind and a long, cold steep pull out sweetness and chocolate while leaving acidity behind. Makes concentrate that keeps for a week.

The brew

  1. 0:00

    Combine

Extra-coarse grounds into the jar, add all the water, stir until every ground is wet.

  2. 0:05

    Steep cold

Cover and refrigerate 14–18 hours. Don't stir again — agitation adds harshness.

  3. 16:00

    Strain

Strain through the filter bag or a paper-lined sieve. Don't press the grounds.

  4. 16:10

    Dilute & serve

You made concentrate: cut 1:1 with water or milk over ice. Keeps refrigerated up to a week.

Harsh or woody
Shorten the steep to 12–14 hours or grind coarser.
Weak after dilution
Steep 18–20 hours or tighten the ratio to 1:6 — don't dilute less than 1:1 with a thin concentrate.
Silty bottom of glass
Double-strain: filter bag first, then a paper filter.
