Cut the heat at the gurgle
When the stream goes pale honey and starts to sputter, remove from heat. Run the base under cold water to stop extraction, then pour.
Dial it in
- Burnt, metallic taste
- Lower heat, start with hot water, and pull it off at the FIRST gurgle — the sputter is steam scorching the last of the bed.
- Sputters violently / weak stream
- Check the gasket seal and don't overfill the basket.
- Too intense
- That's the moka pot. Cut it with hot water americano-style or steamed milk.
