The brew

  1. 0:00

    Rinse & bloom

Rinse the filter with hot water, discard, add coffee. Pour 50g of water in a slow spiral and wait 45 seconds while the grounds de-gas.

  2. 0:45

    First pour

Pour to 150g total in steady circles, staying off the paper. Keep the bed flat.

  3. 1:15

    Pulse pours

Add 100g more (250g total), then the final 100g at 1:45 (350g total). Small circles, gentle flow.

  4. 2:00

    Drawdown

Give the dripper a gentle swirl to flatten the bed. It should finish draining by 3:00.

Dial it in

Tastes sour or thin
Grind finer or raise water temperature — you're under-extracting.
Tastes bitter or harsh
Grind coarser or shorten the pour schedule.
Drawdown past 3:30
Grind coarser; a choked bed over-extracts the bottom of the cup.
