Rinse the filter
Open the filter with the triple fold against the spout, rinse thoroughly with hot water, pour it out.

Bloom
Add coffee, pour 60g of water, wait 45 seconds. The heavy filter needs a full bloom to flow evenly.

Pour in stages
Pour to 250g, let it drop halfway, then to 480g in slow spirals, keeping the water level below the glass rim.

Drawdown & serve
Finish draining around 4:30. Remove the filter, swirl the carafe, pour for the table.
Dial it in
- Stalls or drains slowly
- Grind coarser — Chemex filters clog easily with fines.
- Tastes flat
- Hotter water and a finer grind; the thick filter mutes light roasts brewed timidly.
- Cools too fast
- Preheat the carafe with the rinse water and brew a bigger batch.
